Finding Comfort in Food - Without the Guilt

During tough times, many of us turn to food for comfort - it’s like a warm hug, bringing a sense of security. And guess what? That’s totally normal and human.

One of my favorite tricks? Caffeine-free teas throughout the day - pumpkin spice, cinnamon, chai, chamomile, chocolate hazelnut… so many cozy flavors!

Lately, I’ve been craving all things cheesy, warm, and filling, but I’ve also found ways to enjoy comforting foods in a healthier, nourishing way.

If you’re looking for nutritious, comforting meals, here are some ideas that might hit the spot:

Comforting Breakfasts:

Oatmeal - Top with banana, chopped pecans, chia & flax seeds, cinnamon, and a drizzle of maple syrup.

Oatmeal Pancake - Blend ½ cup cottage cheese, ½ cup oats, and 2 eggs, then cook like a pancake!

Yogurt Parfait - Pro/Greek yogurt topped with fruit and nuts for a satisfying crunch.

Comforting Lunch/Dinners:

Halloumi Salad - Sauté halloumi cheese with sweet potatoes & slivered almonds, then toss over greens.

Soup & Stew - I love alternating between orange soup, vegetable lentil soup, and chickpea stew!

Mushroom Omelet - Sauté mushrooms with soy sauce, teriyaki, and spices, then serve over a cheesy omelet.

Cabbage & Mushroom Steaks - Roast cabbage or mushrooms and top with melted cheese.

And because no comfort list is complete without a sweet treat, here’s a delicious GF chocolate chip mini-cookie recipe I found on Instagram (source unknown, but it’s too good not to share!).

GF Chocolate Chip Mini-Cookies

1 large egg

1/3 cup maple syrup

1/4 cup almond butter/PB

Pinch of salt

2 1/4 cups oat flour (or 3 cups almond flour)

1 tsp baking powder

1 chocolate bar, chopped

Mix everything together. Shape into small cookies or roll into logs & slice.

Bake at 350°F for 12-15 min.

I tried both the almond and oat versions, and both are amazing!
